  • 2 tsp sea salt
  • 1.2kg zucchini, coarsely grated
  • 1 cup thick Greek-style yoghurt
  • 1 tsp finely grated lemon zest
  • 1 small clove garlic, chopped
  • small pinch of sea salt
  • 200g haloumi cheese, finely grated
  • 1/4 bunch dill, chopped
  • freshly ground pepper
  • 100g day-old white breadcrumbs
  • 2 free-range eggs, lightly whisked
  • 1 cup olive oil, for frying
