Pumpkin soup with chorizo croutons

Ingredients

  • 2 kg pumpkin or butternut squash
  • 1 red onion
  • 4 cloves of garlic
  • 2 carrots
  • 2 sticks celery
  • 2 sprigs of fresh rosemary
  • ½ – 1 fresh red chilli to taste
  • Olive oil for cooking
  • Seasoning to taste
  • 1 ½ litres chicken or vegetable stock top up if needed to reach the top of the vegetables
  • 2 chorizo sausages organic pasture fed (optional)
  • parsley chia seeds and extra virgin olive oil for sprinkling over the top
