Pumpkin french toast bites
Ingredients
- 2 tablespoon – pumpkin, canned
- 2 large – egg
- 2 tablespoon – milk
- 1 teaspoon – pumpkin pie spice
- 1 teaspoon – vanilla extract
- 4 slice – bread, whole wheat
SERVE WITH:
- 4 tablespoon – maple syrup, pure
- 2 medium – banana
Method
- Spray baking sheet with cooking spray. Preheat oven to 400 degrees F.
- Add pumpkin, eggs, milk, spice and vanilla to a mixing bowl and whisk well.
- Dip each piece of bread into the pumpkin mixture and place onto baking sheet.
- Bake for 10 minutes, flip and bake for an additional 10 minutes.
- Serve with maple syrup for dipping and banana slices on the side.
Note: If desired, cut your french toast into kid friendly, bite-sized pieces!
