Porridge Facon Chunky Monkey
Ingredients
Porridge:
- 1/2 cup rolled oats (45g)
- 1/2 cup (120ml) unsweetened almond milk
- 3/4 cup (180ml) water
- 1/2 banana
- 1 medjool date, pitted
- 1 tsp mesquite powder (optional)
- 1/4 tsp vanilla powder
- a pinch of pink Himalayan salt (or sea salt)
Toppings:
- 1/2 banana
- 5-6 walnut halves
- 1/8 cup (20g) dark chocolate chips
- 1 tbps coconut shreds
- 1 tbsp peanut butter
Method
In a small saucepan, combine rolled oats, milk and water bring to a boil.
Reduce heat to a simmer, add 1/2 banana and a medjool date cut into small pieces, mesquite powder, vanilla powder and salt. Cook until liquid is absorbed and the flakes are tender.
Transfer porridge to a bowl. Top with the other half of the banana, chocolate chips, coconut shreds, walnut halves and peanut butter. Enjoy!
