Moroccan chicken rice
Ingredients
- 2 tsp sunflower oil
- 400 g chicken thigh (diced,fat trimmed)
- 1 zucchini (sliced)
- 1 packet chicken rice
- 1 2/3 cup hot water
- 1/2 cup dates (chopped)
- 1/4 cup flaked almonds (toasted)
Method

Heat oil in a large frying pan and brown chicken and zucchini.

Stir in rice and water and bring to the boil. Cover and simmer gently for 10 minutes.

Stir through dates, replace lid and allow to stand for 2 minutes. Sprinkle with almonds before serving.
