Mediterranean-style baked fish
Ingredients
- 4 x 150g white fish fillets
- 2 cloves garlic, crushed
- 1/2 cup pitted black olives
- 4 tomatoes, cut into quarters lengthways
- 3/4 cup white wine
- 4 medium potatoes, chopped
- 2 cups green beans, trimmed
- handful fresh basil, roughly torn
Method
Step 1
Preheat oven to 180°C. Cut 4 pieces of foil, big enough to wrap around fish. Place each fillet into foil, top with garlic, olives, tomatoes and wine. Seal by twisting foil together so no air escapes. Bake for 20 minutes.
Step 2
Meanwhile, boil potatoes and steam green beans.
Step 3
Turn out all ingredients from foil onto serving plates.Sprinkle with basil and serve with potatoes and beans.

Tip: Instead of baking in foil parcels, pan-fry all parcel ingredients until fish is cooked through and white wine is reduced.
