Homemade Turkey Breakfast Sausage

Ingredients

  • 1 lb. lean (93%) ground turkey
  • ½ cup grated zucchini
  • 2 tbsp pure maple syrup*
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • ¾ tsp kosher salt
  • ½ tsp garlic powder
  • ½ tsp ground nutmeg
  • ½ tsp dried fennel seeds, crushed with knife
  • ½ tsp red pepper flakes
  • 4 tsp olive oil

Tip: Once the patties are formed and placed on the wax paper-lined baking sheet (you can also use parchment paper), cover loosely with plastic wrap and pop into the freezer into mostly frozen, about 1 hour.
