Haloumi and silverbeet fritters recipe

Ingredients

  • 180 g haloumi (coarsely grated)
  • 2 silverbeet (finely shredded)
  • 1 tbs mint (chopped)
  • 1 lemon (zest)
  • 2 eggs
  • 1/2 cup plain flour
  • 2 tbs olive oil

Tip: To prepare silverbeet, wash well, remove stalks then roll leaves tightly and slice very finely.

English or baby spinach would be a good alternative to the silverbeet.
