Gluten free: lentil salad with olives and feta

Ingredients

  • 1 lb small green lentils (I like Trader Joe’s lentils the best)
  • 6 cups of water
  • 4 cups chicken stock
  • 8 cloves garlic, peeled, left whole, and crushed
  • 3 bay leaves
  • 1/2 cup olive oil
  • 1/3 cup red wine vinegar
  • 1 cup kalamata olives, pitted and chopped
  • 2-3 shallots, finely minced
  • 1/2 cup fresh mint, coarsely chopped
  • 1/2 cup feta cheese (optional)
  • salt and pepper to taste
