Chilli salmon and rice salad
Ingredients
- 125g SunRice Quick Cup microwave brown rice
- 95g tin John West sweet chilli and lime Salmon Tempter
- 1/4 firm ripe avocado, diced
- 1 celery stick, diced
- 50g baby spinach leaves
- lemon juice, to taste
Method
Step 1
Microwave brown rice according to packet instructions.
Step 2
Place rice, salmon, avocado, celery and spinach into a bowl. Season with freshly ground black pepper, then add lemon juice to taste and toss to combine.
