Cheesy Pasta Bites
Ingredients
- 150g pumpkin, peeled and roughly chopped
- 150g cauliflower, roughly chopped
- 250g macaroni
- ½ bunch thyme, leaves picked
- 1½ cups light tasty shredded cheese
Method
Preheat oven to 180°c. Line a muffin pan with baking paper (see note).
Cook the macaroni according to packet directions. Drain and set aside to cool.
Meanwhile, steam pumpkin and cauliflower over boiling water for 15 minutes or until soft. Transfer to a blender and blitz until smooth. Season with pepper to taste.
Stir together vegetable mixture, macaroni, thyme and cheese in a large bowl. Divide mixture into muffin pan and bake for 20 minutes or until golden brown.
