Caramelized Peach and Oat Pancakes

Ingredients

  • ⅔ cup plain yogurt
  • 2 tablespoons butter or coconut oil, melted
  • 1 tablespoon lemon juice (about 1 small lemon, juiced)
  • 1 tablespoon honey or maple syrup
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 1 cup oat flour*
  • ½ teaspoon baking soda
  • Slightly heaping ¼ teaspoon salt
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cinnamon
  • 1 peach, halved, pitted and very thinly sliced (into about ⅛-inch slices)
