Boiled eggs with dukkah soldiers
Ingredients
- 8 large eggs
- 4 slices wholegrain bread
- 1 large firm ripe avocado, peeled, mashed
- 1 tablespoon dukkah
- juice of 1/2 lemon, optional
Method
- Put eggs in a large saucepan and cover with cold water. Bring to the boil, then reduce heat and simmer for 6 minutes (for soft-boiled), or until eggs are cooked to your liking, then drain.
- Meanwhile, toast or grill wholegrain bread until golden.
- Spread toast with mashed avocado, sprinkle evenly with dukkah and cut into lengths. Serve soft-boiled eggs with dukkah soldiers.
