Baked Greek Style Omelette

Ingredients

  • 1/4 cup white long grain rice
  • 1/3 cup olive oil
  • 3 leeks, white part only, thinly sliced
  • 3 zucchini, grated coarsely
  • 2 crushed garlic cloves
  • 1/4 cup mint, chopped
  • 2 tbs dill, chopped
  • 8 eggs
  • 150g marinated feta
  • Sliced red onion and tomato (to serve)
