Asparagus macaroni cheese
Ingredients
- 1 tbs margarine
- 1 onion (finely chopped)
- 3 tbs plain flour
- 2 cups soy milk
- 1/2 cup low fat cheese (grated)
- 1/4 tsp salt
- 3 cups macaroni (cooked)
- 1 bunch asparagus (chopped,steamed)
CRUMBLE
- 3 breakfast cereal biscuit (crushed)
- 1/4 cup low fat cheese (grated)
- 1 tbs margarine (melted)
Method
- Melt margarine in saucepan and sauté onion until soft.
- Stir through flour and cook for 1 minute.
- Remove from heat and gradually add So Good.
- Return to heat and stir over medium heat until sauce boils and thickens.
- Add cheese, salt, cooked macaroni and asparagus. Mix well.
- Spoon mixture into a lightly greased ovenproof dish.
- Combine crumble ingredients and sprinkle over top. Bake in a moderate oven, 180?C, for 30 minutes or until golden brown.

Tip: Don’t be tempted to leave your sauce while it’s cooking – it needs to be stirred continuously to avoid lumps.
