Asparagus macaroni cheese

Ingredients

  • 1 tbs margarine
  • 1 onion (finely chopped)
  • 3 tbs plain flour
  • 2 cups soy milk
  • 1/2 cup low fat cheese (grated)
  • 1/4 tsp salt
  • 3 cups macaroni (cooked)
  • 1 bunch asparagus (chopped,steamed)

CRUMBLE

  • 3 breakfast cereal biscuit  (crushed)
  • 1/4 cup low fat cheese (grated)
  • 1 tbs margarine (melted)

Tip: Don’t be tempted to leave your sauce while it’s cooking – it needs to be stirred continuously to avoid lumps.

Because asparagus spears are so delicate, they only need to be lightly steamed before being added to the macaroni mixture. The heat from the sauce and the 30 minutes in the oven will do the rest of the cooking for you.
