Multi-grain blackberry waffles with yogurt
Ingredients
- 2 cups Multigrain Waffle Mix
- 1/2 cup whole milk
- 1/2 cup buttermilk
- 2 eggs
- 2 tablespoons extra virgin olive oil
- Non-stick cooking spray
Method
Step 1. Start by preheating the waffle iron.
Step 2. Next, using a large bowl, add multigrain waffle mix, whole milk, buttermilk, eggs, and the extra virgin olive oil. Now combine ingredients using a wire whisk or fork.
Step 3. Let waffle mix stand at room temperature for 10 minutes. This just allows it to set the mixture to become a thicker batter.
Step 4. Now, spray waffle iron with non-stick cooking spray and add three (3) tablespoons into each waffle square, add a whole single blackberry into the centre of the waffle batter.
Step 5. Close the lid on the waffle maker and cook until the waffles are golden brown. I usually use a fork to remove the waffles so you don’t burn your hands.
Step 6. Now place two waffles on a serving plate and top with yogurt and blackberry jam. It’s oh so good so be prepared to go back for seconds!
