  • 3/4 cup fresh corn kernels
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1 1/2 cup grated cheese, divided
  • 1 1/2 cup enchilada sauce
  • Cilantro leaves for topping, if desired
